Ingredients
1 tablespoon butter
1/4 sweet onion, chopped
1 pound fresh asparagus, trimmed
1 teaspoon chopped roasted garlic
2
teaspoons Hoi Sin sauce
2 whole boneless and skinless chicken breast,
cut into 1/2 inch slices
Pinch of Salt
Pinch of Salt
Black
pepper
Ground
Peppercorns
Dried
parsley
2 tablespoons
of soy sauce
4 cloves
garlic, chopped finely
1 teaspoon lemon zestA handful of bread flour
Directions
Season the
chicken pieces with the salt,black pepper, lemon zest,soy sauce and dried parsley, set
aside to marinate for 20 minutes or more. In a large non-stick frying pan heat the olive oil
over medium high heat, coat chicken breast in bread flour seasoned with salt
and peppercorns.
Cook the chicken until golden brown, for about 5 minutes.
At the same
time in another frying pan, melt butter over medium heat. Saute onions and garlic until tender.
Stir in asparagus and garlic; saute for 3 to 5 minutes, or until slightly
cooked and heated through.The asparagus should be crunchy and not overcooked.
Serve with
Hoi Sin sauce.
