Beef and Spinach Cannelloni

Today I finally made this delicious dish I've been putting off till later. Although there seem to be many steps to follow its quite simple to make and fun as well. I used cheddar cheese instead of parmesan cheese, you can use which ever one you prefer. Also, instead of making my own bechamel sauce I used lasagne sauce to shorten the cooking time. Have fun cooking and do enjoy your meal!





INGREDIENTS:500g Beef  mince
1 garlic clove
250g spinach
150g ricotta cheese
1 handful fresh basil, torn
1 egg
3 tbsp tomato puree
80g parmesan /cheddar cheese
Lasagne Sauce/bechamel sauce
Tomato sauce or jar of passata
Olive oil
1 teaspoon Eva's Kitchen All Purpose Seasoning
Salt and Pepper to taste





Directions:
Heat your oil in a pan and add your onion and garlic, cook over a low heat until soft but not coloured.
While onions are cooking, prepare spinach. Wash thoroughly and Place in a dry pan and cook for a few minutes until  wilted:
In a bowl, mix the passata with the salt and pepper, fresh basil. Set aside
Add mince meat to cooked onions and cook until brown, add all minced meat and tomato puree.
Stir in spinach and a little more all purpose seasoning, Cook for a couple of minutes.

In a bowl add your ricotta and parmesan/ cheddar cheese.



Add your meat mix, egg and mix together, check seasoning.

Once the mince mixture is cool enough to handle, mix with the beaten egg and stuff the pasta tubes.

Place the cannelloni tubes in the dish. Pour over the passata until the pasta is covered.

Smooth over evenly and pour lasagne sauce over and again smooth evenly.
Sprinkle cheese over.

Cover with foil and bake in the oven for 20 to 30 minutes.


Then, remove the foil and cook for a further 20 minutes or until golden brown and the pasta is soft.

Serve with a salad of your choice.
