Beef Kebabs









Beef kebabs served with mashed potatoes brown vegetable sauce and garlic bread is a tasty dish you can share with family and friends or when you invite special guests over. Kebabs can also be served with rice dishes or eaten alone.




Ingredients

· 1 1/2 to 2 pounds boneless beef sirloin
· 3 bell peppers
· 1 fresh tomato
· 1 onion
· 3 cloves garlic, minced
· 1 teaspoon ground ginger
· 1 teaspoon mixed seasoning spice
· 1 Maggie cube
· 1/2 teaspoon freshly ground black pepper
· 1/2 cup olive oil
· Pinch of salt

Directions


1. Cut the beef into 1 1/2 to 1 3/4-inch cubes and place into a large mixing bowl. Set aside.

 
2. Cut bell peppers, onions and tomatoes into large chunks








3. Combine the minced garlic, ground ginger, black pepper, mixed seasoning spice, Maggie cube and a pinch of salt. Mix together properly to make marinade.


4. Pour the marinade over the meat and toss to coat. Place in the refrigerator in an airtight container or a sealable plastic bag and allow to marinate for 2 to 4 hours.


5. Preheat the grill to medium-high heat. Thread the meat and vegetables onto the skewers leaving about 1/2-inch in between the pieces of meat.








6. Place on the grill and cook, with lid lowered, 2 to 3 minutes per side, 8 to 12 minutes in all (8 minutes for rare and 12 for medium). Remove from the heat to aluminum foil, wrap and allow to rest for 2 to 3 minutes prior to serving.
