Roast Chicken with Vegetables and Potatoes


A yummy recipe which is one of my husbands favorite. Try and enjoy...




Ingredients

1 (4 pound) whole chicken
6 potatoes pealed
3 whole onions 
3 carrots 
1/2 Aubergine
1 courgette
7 french beans
2 tablespoons of butter
Garlic and ginger paste
Oregano
1 teaspoon of Black pepper 
1 teaspoon of Mild chilli powder
1 teaspoon of Chicken seasoning
1 teaspoon of All purpose seasoning
2 Maggie cubes



Directions

1. Clean and chop up veggies and potatoes for roast, sprinkle some olive oil over.



2. Mix spices (oregano, garlic and ginger paste, chicken season, mild chilli powder and all purpose seasoning) plus Maggie Cubes in melted butter.


3. Marinate chicken with spice and butter mixture.



4. Stuff chicken with tender veggies (courgettes bell peppers, french beans and aubergines) and seal with toothpicks.
 


5.Bake till golden brown, tender and a little crispy.


Serve with brown sauce.
