Carrot Soup

 Potatoes are one of the most popular vegetables because they are nutritious, easy to prepare, and very versatile. They’re rich in complex carbohydrates that can supply energy, but not all that high in calories.Carrots are also popular for being an excellent source of vitamin A, and they also contain fiber, vitamin K, potassium, folate, manganese, phosphorous, magnesium, vitamin E and zinc. Put them together and you have a bowl blasting with amazing nutrients!







INGREDIENTS
  • 2 tablespoons margarin/butter
  • 2 onions, chopped
  • 1 clove garlic, minced 
  • 5 cups chicken broth
  • 3 cups diced carrots
  • 3 cups diced potatoes
  • 1 Eva's Kitchen All Purpose Seasoning
  • A sprig of parsley
  • salt and pepper to taste

DIRECTIONS

Saute onions& garlic in margarine/butter until tender.

Add chicken broth, carrots, potatoes and Eva's Kitchen All Purpose Seasoning .Simmer, uncovered, until vegetables are tender, about 20-25 minutes .Puree soup.
Season with salt& pepper. And garnish with parsley.
